Join a small cooking class of a maximum of nine participants inside a real Italian pastificio (pasta factory). Learn how to make many types of pasta in a simple and infallible way. Be able to recreate the dishes at home. Make handmade pasta with three different kinds of grains. The ancient Triticum Monococcum is considered the first cereal cultivated by man, around 7500 BC. Senatore Cappelli selected by Nazareno Strampelli in 1915 disappeared in the 1960s then was rediscovered thanks to a small farmer. The gluten-free Grano Saraceno (buckwheat) flour is the third flour you will use. Receive a welcome drink and listen to an explanation of safe food cutting procedures. Create thin sheets of pasta dough colored green with spinach or brown with sour cocoa. Discover three types of ravioli and a typical Roman sauce such as carbonara, cacio e pepe, or gricia sauce. You will make one type of pasta without egg, which is vegan. Taste all of the pasta and sauces that you have made whilst sipping Italian wine.

    This pasta making, cooking and eating class was the most fun we had in Rome. Of course the Coliseum, Roman Forum, Palatine Hill, Vatican Museum and Sistine Chapel were incredible experiences, but an evening with Emmanuel sharing his pasta making secrets was the highlight of our trip. His passion for making exceptional pasta with quality ingredients and simple, time-tested methods made for a fun and delicious evening! I can’t wait to make pasta when I get home - it’s so much easier than I imagined! Thank you Emmanuel!!

    5 Star Experience! If you want to a perfect experience this is it. The setting is nice and cozy, there were 10 of us. The location is a bit outside of the main area of Rome (about 20 minutes from the Colosseum). We caught the bus there. The chef, Emanuele has a small team and creates a perfect learning experience. He does some explaining, teaching, and demonstrations before we make pasta. Chef is very personable and professional. The 3 hour experience is well paced and it feels like you are immersed the entire time. The one thing I appreciated was the little nuances I picked up on during the evening, subtle techniques I didn't know. Like when mixing your ingredients to make pasta, don't add salt because it dries the dough out. Chef Emanuele also lets you take pictures and record video which is good because he goes over pertinent information that is important for pasta making. The evening exceeded our expectations. We can't wait to go home and practice making pasta.

    This was an AMAZING experience! I recommend this experience to everyone. Even as a solo traveler, this was so much fun and I met a lot of people. Emanuelle was the best instructor and made the process so easy. I really learned so much and really cannot express how much I loved this. I am excited to take these recipes home to my family and try them out.
