Even though Cai Rang Floating Market is open all day, the perfect time to catch the lively atmosphere is at around 6 AM. Cruise along the Hau river from Ninh Kieu Wharf. Stop at a chewy noodle workshop to learn more about other kinds of Vietnamese noodles.  On the way back to Saigon, stop in Ben Tre province, known as the coconut kingdom, for a 7-10 km bike ride.
