A food and wine tour providing a deep immersion in local food tradition and the production attitudes of Troia's territory.

During a 1-hour guided tour a master delicatessen producer will describe the universe of the local sausages, hams and capocollos. Starting with a description of the features of Troia's territory your guide will describe the attitudes of the local farmers, the way they raise their animals, the products they eat and the way they are treated during their lifetime.

After that you will hear the secrets of a correct slaughter, the practice of the "frollatura" that gives the meat the right consistency and compactness and finally the use of aromas to characterize the product and to facilitate the conservation without the use of chemical preservatives. 

Following this you will meet a local wine producer. This segment of the tour is inclined as a narration of the legendary origin of the local vine variety Nero di Troia, a long lasting tradition interrupted by a disaster and recently discovered again.

The sommelier will explain the features of the vine variety and the connection between this and the micro climate features of Troia's territory. You will learn how the frequency of the rain, the duration of the day's light and the wind exposition can influence the taste of the grapes and the wine.

The guide will also elaborate on the production process of Nero di Troia wine, from the cultivation practices to the plant's care, from the cellar works to the wine evolution during its maturation. 

Finally, the tour concludes with a tasting. Each participant will be able to sense every single detail of the previous descriptions though the taste, you will realize how the weather, the land, the knowledge and the skills of the producers create the quality of the products and how every single detail is important to achieve the right result.
